Summer is just around the corner when it comes to making salads. I don`t know why but I make more salads in the summer and I enjoy them more then too. I don`t know they just seem tastier. Starting off with this in house favorite. I grew up with this salad and have continued to make it because everyone in my house loves it. Isn’t it funny how traditions get carried on?
My friends GG and V also make this salad with slight variations. When it comes time to feed a large crowd or even a little one this hits the target. Great with a BBQ, always a must for a picnic or as I made it for my Easter supper. Really it is so versatile. You can even prepare the whole lot without putting it together. I always do the chopping of the veggies ahead. I boil my potatoes and eggs ahead, so when I’m ready to put this together that’s all I have to do. Put it together. You can add what you like into it. For example radishes, green onions, bacon, apples and pears, even pickles. Just try the basic recipe and then decide what you would like to add. It is reasonable price wise to make, compared to what you would pay for it in the store and so much tastier. So what are you waiting for?
Into a large stockpot add 12 cleaned potatoes and 12 eggs. Fill it with water and boil partially covered until potatoes are fully cooked. You can boil the eggs separately but I just put them in together.
Peel and cube your potatoes, peel and chop your eggs, and place everything into a large bowl. I also added chopped green onions here.
This is the Miracle Whip I use for this salad.
Next add 2 cups of MIRACLE WHIP, 1 tablespoon salt and 1 tablespoon pepper. If you think this is to much miracle whip, start off with 1 cup and add as much as you would like to make it creamy. Give it a real good mix. Refrigerate covered for at least a couple of hours. But the longer you leave it the better it tastes. I like to leave mine for 6-8 hours.

RECIPE
INGREDIENTS
12 Potatoes, Cleaned
12 Eggs
1 Cup Of Grated Carrots
4-5 Ribs Of Chopped Celery
4-5 Chopped Green Onions
2 Cups Of Miracle Whip
1 Tablespoon Salt
1 Tablespoon Pepper
PREPARATION
Boil potatoes and eggs or 30-40 minutes or until potatoes are fork tender. Chop your veggies and place everything into a large bowl. Add the miracle whip, salt and pepper and give it a real good mix. Refrigerate for 6-8 hours, covered.
