Easy Triple Decker Egg And Tuna Sandwich

Triple Decker Egg, Tuna 011There are times I do not want to have a big meal at supper time and we always seem to fall into the habit of making something that we have made before.  From time to time I like to venture out and try something different.  Opening the fridge, you usually find something you have that may need to be used up.  Or look in the pantry and see what has been there sitting on the shelf for a very long time.  Most of us would not go hungry if we start to explore what we have in our cupboards or in our freezers.  My daughter-in-law, will be laughing at that statement. She has said to me, “If there is a power failure or a storm, or if we run out of something, we are coming to your house.”  I have a tendency to stock up on items.  My philosophy is, if you can by it on sale, stock up.  Why pay full price when you can buy it reduced. Doesn’t make sense to me why people don’t do this.  In the long run it costs you more if you don’t.

So when it comes to trying to decide what to make for supper, I usually have what I need in the house and don’t have to run to the grocery store.

This sandwich is a combination of using canned tuna that the Mayor purchased and eggs which I always have on hand.

Triple Decker Egg, Tuna 001For this recipe I boiled 8 eggs.  Place the eggs into cold water and the trick I learned is to bring the eggs to a roaring boil, then take them off the burner and let them sit for 12 minutes in the boiled water. Cooked perfectly every time.  Rinse them in cold water and peel them right away.  The best way to peel them is from the large end first. This is something my father taught me.  They peel much easier.  When peeled mash them with a fork and add 3 or 4 tablespoons of MAYO.  Remember MAYO and NOT miracle whip!  Huge difference in the taste. You can put more it’s up to you.  Also add some chopped green onions, salt and pepper to taste and chopped celery.  Set aside.

Open 2 cans of tuna and mash with a fork.  Add 2 ribs of chopped celery and salt and pepper to taste, along with 2-4 tablespoons of MAYO!  Mix and set aside.

Triple Decker Egg, Tuna 002Slice 6 pieces of bread.  This will give you 2 sandwiches.  Slice a 1/2 of a English cucumber, 1/2 red onion and 1/2 tomato.

Triple Decker Egg, Tuna 005Now you can begin to assemble.  First slice of bread top with your egg salad.

Triple Decker Egg, Tuna 006Your second slice of bread top with the tuna salad and place it on top of the egg salad slice.

Triple Decker Egg, Tuna 011Cut in half and serve with whatever you like.  I chose some pickled roasted red peppers.  You can also serve with fries, salad, pickles and even soup.

RECIPE

INGREDIENTS

6 Slices Of Egg Bread (Or Whatever You Have)

8 Hard Boiled Eggs

2 Cans Of Tuna

1 Stalk Of Chopped Green Onion

2 Stalks Of Chopped Celery

1/2 Tomato

1/2 Red Onion

1/2 English Cucumber

Few Leaves Of Lettuce

Butter

Mayo

Salt And Pepper

PREPARATION

EGGS

Place eggs into cold water, bring to a boil and remove from heat.  Let the eggs sit in the hot water for 12 minutes.  Drain and rinse with cold water.  Peel from wide end.  Place peeled eggs into a bowl and mash with a fork. Add mayo, green onion, celery, salt and pepper and set aside.

TUNA

Open 2 cans of tuna into a bowl.  Mash with a fork and add mayo, celery and salt and pepper.  Set aside.

Slice your tomato, cucumber, red onion, and lettuce.  Set aside.

Any of the above, eggs, tuna, and veggies can be prepared ahead until ready to use.  Any leftovers can be covered and stored in the fridge for lunches, suppers or snacks for the next few days.

Cut 6 slices of egg bread.  I used egg bread this time but it was very delicate to work with.  So use any kind of bread that you prefer.  Like rye, french, or whole wheat.  Toast each slice and butter them.

On the bottom slice place some egg salad, then another slice of bread topped with some tuna salad.  On top of the tuna place tomatoes, cucumbers, onions, lettuce and salt and pepper as required.  Slice in half and your ready to eat.
