I was undecided as what to make for supper tonight. Wanted something different. Love chicken. but what kind of chicken. No point in asking my husband. He’s no help. He’ll say “Anything”. So I decided to make chicken salad. There are so many ways to make this dish. But not wanting to fuss too much, the old fashioned way was good enough. I opened the fridge to see what I had to put into it and then it just a matter of cooking, chopping and mixing. I opted to bake the chicken and once that was done, supper was pretty near ready. I usually do my chopping ahead of time, so when the chicken is ready all I have to do is throw everything together. Love this recipe. It is really tasty and when you put a couple slices of bacon on top, oohh gosh it’s good.
Place a whole chicken into a casserole dish and bake at 400 degrees for approximately 2 hours. I find it a good idea to check it with a meat thermometer. I usually add a little water in the bottom of the pan but wait to season it. You can season with salt and pepper if you like. Even a little garlic powder would be nice.
And place the meat into a bowl. DO NOT THROW OUT THE BONES FROM THE CHICKEN. You can bag them and put into the freezer. These bones make the best and healthiest soup ever! I will be posting the recipe very soon.
I added 1 finely chopped red pepper, 2 finely chopped dill pickles, 2 large finely chopped celery sticks and 1 finely chopped red onion.
Along with the chopped veggies, start by adding 1 cup of mayo. You can add as little or as much as you want.
Give it a good old mix and tah dah! Your done. Though I would recommend refrigerating it for a few hours. I think it tastes better cold.
There’s so many ways to serve this. This time I opted to serve it buffet style. You can serve it on a bed of lettuce or even in an avocado. I love it in a sandwich. It’s totally up to you. Oh yeah, I forgot to mention, broil some bacon. If you make sandwiches, they’re delicious with the bacon, lettuce and tomato.
RECIPE
INGREDIENTS
1 Whole Chicken, Baked And Skinned
10-12 Slices Of Broiled Bacon (Opt.)
1 Red Pepper Finely Chopped
1 Red Onion Finely Chopped
2 Sticks Of Celery Finely Chopped
2 Finely Chopped Dill Pickles
1 – 1-1/2 Cups Of Mayo
Salt And Pepper To Taste
PREPARATION
Bake chicken in a 400 degree oven for approximately 2 hours. Cool and proceed to remove skin and shred the meat. Add your red pepper, red onion, dill pickles, celery, mayo and salt and pepper. Mix well. Refrigerate for a couple of hours.
