Orange Cranberry Scones

Whole Wheat Chicken Quesadillas


QuesdilleasI love to make Quesadillas.  You can put anything going into them and you have a quick and easy meal.  The tortillas now come in so many varieties.  Spinach, sun-dried tomato, corn, whole wheat,  pesto you just have to find one you like and the magic starts to happen.  Kids love them to.  Heat them in a skillet and in a few minutes you have a meal.

st george ont 021For this recipe you’ll need 1 onion, sliced. 1 yellow, orange and green peppers., sliced.

st george ont 028Two seasoned chicken breasts.  Just sprinkle on some seasoned salt and your choice of the kind of pepper you would like.  I covered the chicken with foil and baked in the oven at 350 F for 45 minutes.  You could also add a little water into the pan.

st george ont 023Into a fry pan add about 4-5 tablespoons of olive oil.  I love olive oil.  It sits right next to my stove ready to use.  Fry the onions until they are translucent.

st george ont 025Add the peppers to the pan with your onions and saute them until they are soft but still have a slight crispness to them.  About 4-5 minutes.

st george ont 029Into another pan, I like to use my cast iron skillet, place a tortilla, some cheese

st george ont 030Your chicken which has been shredded and hot sauce if you like

st george ont 035See how nicely golden it turned.  When the other side is toasted and the cheese has melted, remove from the pan.  Continue the process with the other tortillas and fillings.

st george ont 036Place on a cutting board and cut into wedges.  I like to use a pizza cutter.

QuesdilleasServe with salsa, sour cream, jalapeno slices along with a nice salad.  There you have it, supper in a flash.


2 Whole Chicken Breasts

Sprinkling Of Seasoned Salt

Sprinkling Of Herb And Lemon Pepper

Oil For Frying

1Whole Large Onion

3 Whole Large Peppers (colours of your choice)

12 Whole Small Flour Tortillas

3 cups Grated Cheese, Of Your Choice

Salsa, For Serving, Opt.

Sour Cream, For Serving, Opt.

Jalapeno Slices, For Serving, Opt.

Hot Sauce, Opt.


Cook your chicken breasts in the oven for approximately 1 hour, or you can most certainly fry them  in the pan until fully cooked.  Remove from your source of heat and cool.  Cut into cubes, slices or just tear apart.  Set aside.

In a cast iron skillet add some olive oil and your onions, then your peppers.  Cook them for about 5 minutes.  Remove from the pan and set aside.

In the same pan over medium heat, add some olive oil and lay a tortilla in the pan.  Build the tortilla by adding a good amount of the shredded cheese, chicken and the peppers.  Top with more grated cheese and a second tortilla.

When the tortilla is golden on both sides and the cheese has nicely melted, remove from the pan and repeat with the remaining tortillas and fillings.  Cut into wedges and serve with salad and salsa, sour cream and  jalapeno slices.


st george ont 014There are two things I eat out of a mug.  Chile and soup.  This way it all stays piping hot while you eat it.  I don’t make chile often but it is one dish my husband loves and will request.  When I put corn into it he thinks he’s in seventh heaven.  Well, he thinks that when I put corn into anything.  If I can’t get him to eat something, chances are that if I throw in some corn he’ll eat it and ask for more.  This recipe I have made for years, adapting it when the mood strikes me but the basic recipe is the one I generally make.

This is what you will need.  One 19 or 28 oz., one can of pork and beans,  1- 28 oz. can of kidney beans, 1-28 oz can or chopped tomatoes, 2 pounds of ground beef, 1 chopped onion and 2 cloves of chopped george ont 006

And this time of course I added 2 cobs of corn.  After cutting them of the cob.

st george ont 003In a stock pot or large frying pan add your onions and garlic and fry until onions are translucent.

st george ont 005When onions are cooked add your ground beef and stir fry until meat is cooked.

st george ont 008Next add all the other  ingredients including salt and pepper and give it a good stir.  Bring to a boil then reduce heat and simmer for 1 1/2 – 2 hours, partially covered.

Pour into a serving cup or bowl and enjoy!


1 19 oz. Can Pork And Beans

1  28 oz.  Can Of Kidney Beans

1  28 oz. Can of Chopped Tomatoes

2 Ears Of Corn, Optional

2 Lbs. Of Ground Beef

1 Chopped Onion

2 Cloves Of Chopped Garlic

3-4 Tablespoons Of Olive Oil

Hot Sauce , Crushed Chilies To Taste, or  2 – 3 Chopped Hot Peppers,  Optional


Heat oil in pan then add your chopped onions and garlic.  Fry for a few minutes and add you ground beef.  At this point you can add the crushed chilies.   Fry the meat until there are no pink or raw bits left.  Then add the rest of your ingredients, bring to a boil, reduce the heat and simmer partially covered for 1 1/2 – 2 hours.  It will thicken, if it doesn’t then uncover and cook a bit longer.  If someone cannot eat things that are hot, then add your crushed chilies or hot sauce when you place the chili into a bowl.

st george ont 014My husband loves this chili and other then hot dogs, he will request that I make this.  With or without corn.


Port Dover, Ontario

st george ont 067 Port Dover, Ontario is a beach town.  I find it best to visit off season because it is the quietest.  The kids are back at school and holidays are over for most of the work force.  We normally would come like all the other people through the summer.  You have very lengthy line ups at most of the restaurants, gift shops and any other attractions they have.  After visiting in September, we said we would now come for our fish dinner once the kids have gone back to school and through the week when most people are at work. It was fantastic.  Nice and quiet and peaceful.

Port Dover is known in the area for their fresh fish so it has become and annual trip for us to one of their local restaurants for this delicacy.  Perch and  pickerel are the ones we normally order.

st george ont 065This time we visited Callahan’s.  It is a nice restaurant.

st george ont 055Situated right on the beach with it’s palm trees.  Yes, palm trees.  At first I thought they were not real.  I mean really, where in Ontario can you find palm trees?  So I asked the waitress.  She told me they were real.  I then asked how they survived the winter?  She proceeded to tell me up until this year they were dug up and stored.  Though, because of the expense they were going to try and wrap them this year, leave them where they are to see if they would survive the harsh winters we normally have.

st george ont 054One thing that I don’t understand, if you go to Ireland which is much further north then Ontario, and completely surrounded by water, palm trees exist quite well and are all over the place.  Yet here it is rare to find one and one that would survive the winter.  Well, I hope it works for them. It looks so nice and along with the sound of the waves and the seagulls it is so relaxing.

st george ont 074But the one thing I like to do is to take a stroll down the pier.

st george ont 075And watch the boats come in from their fishing expeditions.

st george ont 080This must be a hard way to make a living.  We should be grateful to these people for doing what they do.  I recall being on a trip once and we decided to go on to the open waters of the Atlantic to fish and not even very far from shore. The waves were not very high and it didn’t seem like a big deal at the time.  I threw my fishing line in and was trying to keep my balance.  Then all of a sudden I was not feeling so good.  Never ever having trouble in the past of being on a boat, I couldn’t believe it.  This was what being sea sick was like.  Not so nice.

st george ont 057This is a growing community.  New neighborhoods have sprung up over the years.  Some beautiful homes have been built. Ideal location for people who want a slower pace of life that is not found in the city.

Port Dover is also well know for having the biggest single day motorcycle event in the world.  Friday the 13th motorcycle rally. I have heard that it can exceed more then 100,000 bikers.

So whatever your reason going and exploring you’ll have a marvelous time.
